Labrador Tea Custards
Embark on a flavorful journey with us as we delve into the culinary wonders of Labrador Tea, also known as Muskeg Tea. Celebrated for its distinctive piney and floral notes, I first learned about this plant from a Dënesųłinë́ nurse in the far north.
Labrador tea holds a special place in Dene culture, where it is utilized for various purposes. Traditionally, Dene people have valued Labrador tea for its medicinal properties. The leaves are often brewed into a soothing tea, believed to have therapeutic effects on ailments such as colds, respiratory issues, and digestive discomfort.
In this episode, drawing inspiration from the culinary expertise of Yukon chef Michele Genest, we'll show you how to make exquisite Labrador Tea custards. The result is that I make a bit of a mess, as well as a one-of-a-kind custard blend, that showcases the unique flavors that Labrador Tea brings to the table. Join us in this culinary adventure, where we capture the essence of this remarkable plant!
